Our Crassostrea virginica oysters, which are native to us, take 3 years to grow from the little spats into the delicious oysters you love today. We offer 3 different types: Red Label Cocktail, Gold Label Choice, and Blue Label Select.

The Red Label Cocktail: Deep-cupped oysters that are simple to shuck and produce firm, full meat. Not overly salty and crisp, these are great for eating at home, on picnics or during oyster happy hours. These cocktail oysters are the right size for any event, measuring anywhere from 2–3 inches, and go well with white wine, cider, cool beer, or even lemonade.

The Gold Label Choice: 2.5-3 inches tall and are prized for their deep cips and robust, full-bodied texture. perfect for any restaurant due to how easy they are to shuck, possible due to their rigid even shells. These are perfect for every occasion and have a great price-to-quality ratio, making them appealing to both oyster enthusiasts and culinary experts. Can be eaten raw and cooked. 

The Blue Label Premium: delicate and consistently shaped, with a deep cup that is simple to open. These oysters are a gorgeous complement to any dinner party, coming in uniform size and shape and measuring 3 inches and greater. They are a favorite of oysters bars and restaurants with firm meat that has an amazing, subtle saltiness that makes for a fantastic raw bar experience
